Make it traditional by sealing 400g of diced pork in a casserole dish and adding 330g of Potts’ Pibil sauce, cover with foil and then the casserole lid. Oven cook at 150°C for 1.5-2 hours until meat is cooked and breaks apart when pressed with a fork. Serve on soft corn tacos with pickled red onion, jalapenos, or your favourite Mexican condiments.
Make it vegan by stir-frying red pepper and 300g of pulled-style Soya protein and cooking for 5 minutes. Add 330g of Potts’ Pibil sauce and gently bring to a simmer. Simmer until cooked and piping hot (approximately 5 minutes). Use for Tacos or Fajitas with your favourite Mexican salsas and condiments.
